Peanut Butter Cookies

I’m horrible at baking, and it doesn’t help that I no longer have an oven. But with our annual Kris Kringle coming up, I decided to try my hand at making cookies once more. I did some chocolate chip, and oatmeal cookies a year or so ago which I was happy with, so I figured I couldn’t be that far off with this basic peanut butter cookie recipe.

I followed this recipe, halved it for the test batch, and added a few dashes of ground cinnamon. These came out okay, a good mix of sweet and savory, crisp outside and chewy inside. I’m bringing some to school tomorrow for people to try, and hopefully it’ll be a winner. This was unbelievably easy to make. My only problem was that I didn’t have an oven. I first tried using a toaster oven, but since I couldn’t control the heat, the cookies ended up burning after only five minutes. I ended up using the turbo broiler and I’m pretty satisfied with the results.
