A long morning of law school, skipping breakfast and lunch and an afternoon watching the Chief Justice of the Philippines on trial deserve a decent meal. Thus, for my first meal yesterday, I fixed up a late, late breakfast. Having had too much caffeine in the morning, I decided to go for coffee aromas and flavors instead. Ergo, potato rosti, a fried egg, and Victory Storm King Stout.
Recently, I’d been turning to Mark Bittman’s How to Cook Everything for recipe ideas. Once again, he comes through with his foolproof rosti recipe. Rosti is a Swiss-style potato pancake, similar to a hashbrown. I grated a potato with the skin on, drained the water, and fried the pancake in some browned butter. A fried egg followed for good measure. All in all, this was an excellent, albeit late breakfast when joined by the Storm King.
I felt that something was lacking midway through my meal, and decided to toss some grated edam cheese on top of everything. I should have done so from the start. I love the way the way all the yellows in this dish come together from the cheese, the runny yolk, to the browned potato rosti.
