Baked lettuce: recipe with browned cooked ham

How to make lettuce fried in a minced onion, carrot and lard, to be cooked in the oven with the addition of broth and accompanied by slices of cooked ham, browned and seasoned with marsala sauce.


Ingredients for 4 people

- 4 whole lettuces

- 100 g of cooked ham cut into 4 slices


- 20 g of butter

- 60 g of lard cut into small pieces

- 1 small carrot


- 1 small onion

- 1/2 glass of dry marsala

- 1 teaspoon of cornstarch


- 1/4 liter of broth -also nut-

- salt and pepper

How to prepare baked lettuces

Clean and wash the lettuces leaving the tufts whole and removing the hardest external leaves.

Blanch them in slightly salted boiling water for fifteen minutes.

Drain them, pass them under running water and drain them well by compressing them slightly so that they lose excess water.

Prepare a mince with onion, carrot and lard, put the lettuces cut in half on top, then sauté everything in a roasting pan over high heat.

As soon as the carrot and onion have taken on a beautiful golden color, pour the broth into it and cover the container with a sheet of aluminum paper, lightly buttered, then transfer the baking dish to the oven, continuing cooking for about twenty five minutes.

Cut the slices of cooked ham in half and sauté them in a pan with twenty grams of butter for eight minutes.

Put a pan on the heat with the cornstarch dissolved in very little water and the marsala, then thicken the sauce.


Boil the sauce for a few minutes and pour it over the ham, simmer for five minutes.

Season the cooked lettuces with a little salt and pepper, arrange them on the tray, alternating them with the slices of browned ham.

Finally pour the preparation of the ham on the preparation and serve immediately on the table.
