Calabrian beans with peppers

How to make Calabrian beans by frying the onion with oil and garlic, then adding the peppers, potatoes and beans to the sauté, all flavored with oregano, parsley and chilli pepper.


Ingredients for 4 people

- 150 g of dried borlotti beans

- 2 bay leaves


- 1 red onion

- 2 cloves of garlic

- 1 red pepper


- 1 yellow pepper

- 2 potatoes

- 1 bunch of parsley


- 1 pinch of oregano

- extra virgin olive oil

How to prepare Calabrian beans

After soaking the beans overnight, cook them in a pan with cold water, bay leaf and a pinch of salt for about 40 minutes.

Slice the onion thinly and gently fry it in a pan with the oil and garlic cloves.

Wash, clean the peppers by removing the stem and internal seeds, then cut them into small pieces.

Peel the potatoes and cut them into fairly large cubes.

Add the peppers and potatoes to the onion sauté.


Drain the beans, keeping the water aside, then put them still hot in the pan together with the peppers and potatoes, adding salt and pepper.

Cook for about half an hour, occasionally wetting with part of the cooking water.

Sprinkle with the chopped parsley, the oregano and the chilli pepper, then leave to flavor a little more and serve the Calabrian beans in the pan, accompanied with rustic bread.
