How to make a beetroot and zucchini pie, a recipe to bake in the oven that includes, among the ingredients, potatoes and yellow flour with eggs.
Ingredients for 4 portions
- 4 courgettes
- White flour
- 2 tablespoons of yellow flour
- 2 eggs
- Chard gr. 500
- 2 potatoes
- A white onion
- Olive oil
- Salt and pepper
Preparation of the chard and courgette cake
First prepare the puff pastry by mixing 3 ounces of white flour with the eggs, a tablespoon of oil, salt and a little warm water.

Work it well, make it a ball and leave it to rest for an hour in the cool. Boil the beets or the spinach (or both), squeeze them and mince them.
Put them in a bowl and add the peeled and sliced potatoes, the zucchini and the sliced onion, the yellow flour, an egg, 4 tablespoons of oil, salt and pepper.
Roll out three quarters of the sheet into a greased baking tray, pour the well-mixed filling into it and cover everything with the remaining sheet. Lightly grease it, prick it and put it in the medium oven for about an hour.
