How to make chicken broth with a hen, a spongy veal bone, celery, onion, carrots, water and salt. To degrease it, just put it in a container in the refrigerator, then when it is cold, with a spoon it is easy to remove the solidified fat left afloat.
Ingredients for 2 liters of broth
- 1 medium-sized hen already cleaned
- 1 spongy calf bone
- 1/2 medium onion
- 1 celery rib
- 2 carrots
- 3.5 liters of cold water
- salt
How to prepare a good chicken broth
Immerse the well cleaned and degreased hen, washed inside and out, in a pot with three and a half liters of cold water together with all the other ingredients.
Put the pan on the fire, which at the beginning must be quite lively, froth repeatedly and, when the water starts to boil, lower the flame to the minimum and let it boil slowly for about 3 hours.
Pass the broth through a fine strainer and let it cool.
