How to make duck breast with pumpkin and salad, a recipe that includes a final dressing with vinaigrette prepared using extra virgin olive oil, mustard and red wine vinegar.


ingredients for 4 people

- 2 duck breasts

- 200 g of pumpkin


- lettuce or other salad

- 200 ml of extra virgin olive oil

- 3 tablespoons of red wine vinegar


- 1 tablespoon of mustard

- salt and pepper

How to prepare duck breast with pumpkin and salad

In a pan, cook the duck breasts over a high heat for 15 minutes, then add salt and pepper to taste.


To prepare the vinaigrette, put the vinegar and mustard in a bowl, mix and then add the extra virgin olive oil by beating the two liquids with a whisk so as to make the oil emulsify with the vinegar until they are made into a mixture homogeneous.

Bake the diced and salted pumpkin in the oven for about 5 minutes.
