Pan-fried pizza-style cod

How to cook pizzaiola cod, pan-fried recipe with cherry tomatoes, olives and capers, with parsley and oregano flavor.


Ingredients for 4 people

- 600 gr of cod fillets

- 500 gr of peeled tomatoes


- 7 or 8 cherry tomatoes

- 3 tablespoons of pitted and chopped black olives

- 2 tablespoons of drained pickled capers


- 4 tablespoons of olive oil

- 1 onion

- a handful of chopped parsley


- a pinch of oregano

- salt and pepper

How to cook cod pizzaiola

Slice the onion and fry it with oil and a little water.

After add the peeled tomatoes, capers, olives, salt, pepper.

Cook for about 10 minutes, stirring often.

In this sauce, put the fish fillets and continue cooking for about a quarter of an hour, turning them once.

At the end of cooking add the whole cherry tomatoes, olives, parsley and oregano.

The dish can be served with toasted croutons, should it be too soupy.
