Pan-fried white onion omelette

How to make the white onion omelette, an easy recipe for cooking a second dish with Parmesan, the necessary ingredients and the procedure that involves cooking in a pan.


Ingredients for 4 people

- 1 tablespoon of extra virgin olive oil

- nutmeg


- 30 g of grated Parmesan cheese

- 6 eggs

- 2 large onions


- 10 g of butter

- salt and pepper

Preparation of the white onion omelette

Peel the onions and slice them very finely, then cook them in a pan with hot oil, salt, pepper and a grated nutmeg, stirring often.


As soon as they start to color, add 2-3 tablespoons of water and lower the heat to the minimum, leaving to stew for 15 minutes, until the onions are well kept.

In a bowl beat the eggs with salt and pepper, add the warm onions, the Parmesan cheese and mix well.

In the same pan, used first to brown the onions, melt the butter, then pour the egg and onion mixture into it.

Cook the omelette over low heat, breaking it up here and there using a wooden spoon.
