Pasta with 4 cheeses without gorgonzola

How to make pasta with 4 cheeses without gorgonzola, recipe with gouda cheese, Gruyère cheese and parmesan, to be prepared preferably using spaghetti.


Ingredients for 4 people

- 400 g of spaghetti

- 1 onion


- 1 tablespoon of butter

- 1 tablespoon of flour

- 375 ml of milk


- 50 g of Gruyère cheese

- 50 g of gouda

- 50 g of parmesan


- salt

- ground pepper

- grated nutmeg

- 50 g of pine nuts

- 1 tablespoon thyme leaves

Time of realization

About 30 minutes

Preparation

1) After cooking the spaghetti in abundant boiling salted water, respecting the times indicated on the package, drain and let them drain.

2) Peel the onion and dice it.

3) Take a pan and heat the butter, then pour the diced onion, sprinkle with flour and brown.


4) Add the milk, mixing carefully.

5) Cook over low heat for 5 minutes, remembering to stir regularly.

6) Add the Gruyère cheese, gouda and 40 g of parmesan cut into flakes to the sauce, letting it melt on a low heat without stopping to stir.

7) Salt, pepper and add the grated nutmeg.

8) Put the pine nuts to toast in a pan, refraining from using seasonings.

9) At this point mix the spaghetti with the cheese-based sauce and distribute the portions on the plates, sprinkle with pine nuts, parmesan flakes and thyme leaves.
