Penne with anchovies with black olives and pecorino

How to cook penne with anchovies, recipe with pitted black olives and grated pecorino cheese, as well as basil leaves, to be prepared in about 30 minutes.


Ingredients for 4 people

- 400 g of pens

- 6 anchovy fillets


- 100 g of pitted black olives

- 100 g of grated pecorino cheese

- 1 onion


- 2 cloves of garlic

- 2 tablespoons of olive oil

- 1 can of peeled tomatoes


- half a bunch of parsley

- small basil leaves for garnishing

About 30 minutes

Preparation

1) Following the times prescribed for cooking, cook the penne in plenty of salted water, making sure it remains al dente.

2) After peeling onion and garlic, chop both, then cut the anchovy fillets into small pieces.

3) Brown the onion and garlic in hot oil, stirring for about 4 minutes, waiting for them to take on a golden color.

4) Add the anchovy fillets and tomatoes, adjusting salt and pepper, then cook over medium heat for about 8 minutes.


5) At this point mash the tomatoes and wash the parsley, to dry before chopping it.

6) After cutting the olives into slices, incorporate them in the sauce and heat them, then add the chopped parsley.

7) Finally season the penne with the sauce, sprinkle with pecorino cheese and serve using the basil leaves as decoration.
