Potato tortelli: recipe with bacon

How to make potato tortelli, recipe with added bacon and nutmeg filling, all the necessary ingredients and dressing with meat or mushroom sauce of your choice.


Ingredients for 6 people

- White flour type 0 gr 500

- White potatoes 600 g


- 100 g bacon

- 5 eggs

- 2 cloves of garlic


- Rosemary

- Nutmeg

- Parmesan


- Olive oil

- Salt and pepper

How to cook potato tortelli

Prepare the pasta with flour, 3 eggs, water and salt as usual.

Make it a ball and let it rest.

Boil the potatoes, peel them and pass them. In a saucepan, brown the finely chopped bacon, garlic and a little rosemary in 6 tablespoons of oil.

As soon as the garlic shows signs of browning, eliminate it together with the rosemary.

Add the bacon and the oil to the potatoes that you will have put in a bowl.

Add 2 eggs, 4 tablespoons of Parmesan cheese, a little nutmeg, salt and pepper.


Stir well and let it rest.

Roll out the pasta and make some discs of about 5 centimeters in diameter, put a teaspoon of filling in the center, then close them and seal the edge with a fork.

Boil the tortelli in abundant salted water and season with mushroom or meat sauce.
