How to make sweet rice cake, simple milk-based recipe, with almonds and amaretti, preparation process and cooking times in the oven.
Ingredients for 4 people
- 700 gr. of milk
- 200 gr. of water
- 200 gr. of rice
- 150 gr. of sugar
- 4 eggs
- 120 gr. of already peeled and chopped almonds
- Lemon peel
- 5 macaroons
- 50 gr. of candied fruit

How sweet rice cake is made
Bring the milk combined with water, a spoonful of sugar and lemon zest to a boil.
Add the rice and let it cook until it has absorbed all the liquid, then let it cool by removing the lemon zest.
Beat the egg yolks together with the remaining sugar, add the chopped almonds, the crushed amaretti, the candied fruit, the cooked rice and finally mix the whites whisked until stiff.
Grease a cake pan and sprinkle it with breadcrumbs, pour the mixture into it and cook for 40 minutes in the oven at 180 °.
Serve the cake warm or cold.
