Ingredients for 4 people

- 4 thinly sliced ​​medium size onions

- 250 g flour


- 8 tablespoons of olive oil

- 10 g crumbled brewer's yeast

- 20 g of lard


- Some fresh sage leaves in small pieces

- a few tablespoons of warm water

- a little oil to grease the pan


- salt

Preparation of pizza with onions

Mix 40 grams of flour with the baking powder and a spoon or two of warm water on the pastry board.

Form a ball and, after having floured it, read it, place it in a small bowl and cover it with a cloth napkin, waiting for it to rise for about an hour, keeping it in a warm place.

Put the remaining flour on the pastry board, add the leavened dough ball and knead well with your hands.

Give the dough the shape of a ball again, lightly sprinkle with flour and leave to rise covered by a napkin for another two hours.

Slice the onions very finely and, after sprinkling them with a pinch of salt, spread them on a slightly inclined plate in order to allow them to lose all the vegetation water.

As soon as the dough has risen well, spread it on a pastry board and incorporate the lard, four tablespoons of oil and a pinch of salt, then knead carefully until a fairly elastic dough is obtained.

Grease the pan and with your fingers spread the dough on the bottom.

Place the onions, some chopped sage leaves and the residual oil on the surface, then leave the pizza to rise for another 30 minutes.


Once this is done, put in the oven for about 40 minutes, once cooked, serve immediately hot.
