Asparagus with salmon slices and coriander sauce

How to make asparagus with salmon slices and seasoned with coriander sauce, prepared by adding lemon and peppercorns mixed with olive oil.


Ingredients for 4 portions

- 6 tablespoons of extra virgin olive oil

- 1 untreated lemon


- 1 teaspoon of peppercorns

- 2 bunches of asparagus

- 200 gr. of smoked salmon cut in one piece


- 1/2 tablespoon of coriander grains

- salt

- freshly ground pepper


Preparation of salmon asparagus with sauce

Squeeze the lemon and keep the juice aside. In a bowl put 3 tablespoons of oil, add the peppercorns and half of the lemon juice. Mix with a wooden spoon, making the mixture emulsify well.

With a sharp knife, cut the salmon into very thin slices, put them in the bowl and turn them gently in the sauce, making them wrap completely. Leave them to marinate for an hour, drain them and set them aside.

Clean the asparagus, remove their white part and peel them with a potato peeler. Wash them and steam them for 8-10 minutes, then drain and dry them, cut the stem into rings and instead keep the tips whole.

In a bowl put the remaining lemon juice, add the salt and mix until it is completely dissolved. Add the remaining oil, the ground pepper and the coriander grains. Beat lightly with a fork to make the ingredients emulsify.

Arrange the asparagus and salmon slices harmoniously on the serving tray, cover them with the prepared sauce and serve immediately.
