- 100 g of fresh pecorino

- half a glass of milk


- extra virgin olive oil

- 6 eggs

- 1 bunch of chives


- 1 bunch of thyme

- 1 bunch of marjoram

Preparation of the aromatic herb omelette in the oven

Start by cutting the pecorino cheese into small cubes, then peel and finely chop together chives, thyme and marjoram.

Shell the eggs in a bowl, add the milk and lightly beat everything with a fork or a small whisk.

After cooking, take out of the oven and cut the diced omelette, then season it with a few drops of balsamic vinegar and serve it on the table.

To make the omelette softer, it is advisable to separate the yolks and egg whites, then incorporate the latter whisked so as to make it swell as if it were a soufflé.
