Baked saddle of lamb: how to cook it Sicilian


How to make the Sicilian lamb saddle, a recipe to be cooked in the oven, for which few ingredients and a preparation procedure that does not require particular difficulties of execution are required.

Ingredients for 4 people

- 1.2 kg saddle of lamb

- 30 g of butter

- 30 g of oil

- 1 cup hot nut broth

- salt and pepper

- sprigs of fresh parsley

Preparing the saddle of lamb in the oven

Wash the lamb saddle, dry it and tie it with a colorless twine so that it keeps its shape during cooking.

Spread the meat with butter and put it in a pan with high edges, then pour the oil over it and sprinkle with salt and freshly ground pepper.

Put the container in the preheated oven and cook the saddle for about 45 minutes, turning it frequently and wetting it with the cooking base, adding a few ladles of broth, if necessary, so as not to dry it too much.

When the meat is cooked, remove it from the pan and detach the pulp from the bone carcass, using a very sharp knife and taking care not to break it.

Cut the saddle of lamb into slices transversely, then reassemble it and put it back in the carcass, so that the saddle is apparently intact.

Arrange it on the serving plate and decorate with the sprigs of fresh parsley before serving.
