IL Burro Bercy is a beef marrow sauce, a refined recipe, suitable to accompany grilled meats, which also includes shallots, as well as lemon and parsley.
Ingredients for 4 people
- 100 g of butter
- 50 g of ox marrow
- 1 glass of dry white wine
- 1 shallot
- 1/2 lemon
- chopped parsley
- salt and freshly ground white pepper
How to prepare ox marrow sauce
Blend the ox marrow in slightly salted boiling water, drain well and work with a fork until a homogeneous cream is obtained.
Chop the shallot and put it on the fire in a pan with a glass of dry white wine.
When the wine has almost completely evaporated, add the marrow, the melted but unsweetened butter, the juice of half a lemon, a little chopped parsley, salt and white pepper.
