How to make boiled zucchini, the recipe illustrates how to boil this type of vegetable in hot water and then proceed with the dressing with oil and lemon.


Ingredients for 4 portions

- 4 tablespoons of olive oil

- chopped parsley


- 600 gr of courgettes

- 1 lemon

Preparation of boiled courgettes

In a large saucepan, boil two liters of water with two tablespoons of coarse cooking salt.


While waiting for the water to heat up, prepare the courgettes by removing the two ends and washing them in cold water, then divide them into two first in the direction of the width and then in that of the length, cutting the pieces obtained into 2 other smaller parts.

As soon as the water boils, throw the zucchini and cook them for 5 minutes, making sure that they do not pass cooking, they must remain al dente.

Drain and distribute the courgettes in a large diameter dish, then squeeze the lemon over and sprinkle with the olive oil, finally add the chopped parsley.

Serve the courgettes cooked with lemon hot or cold, for this type of side dish it is indifferent.
