Boiled eggs with puff pastry and cream sauce


How to cook eggs and puff pastry together, recipe with various steps to follow for the preparation, including milk and cream with onion and carrot.

Ingredients for 4 portions

- 15 g of butter

- 20 g of flour

- 5 tablespoons of cream

- 1 tablespoon of lemon juice

- 2 sprigs of tarragon

- 5 eggs

- 0.6 l of milk

- 1/4 onion

- half carrot

- 1 bay leaf

- 200 gr of puff pastry

How to prepare eggs and puff pastry

Peel the half carrot and, after washing it, cut it into slices.

Peel and wash the onion, then boil the milk with the onion, the carrot slices, the bay leaf and 3 peppercorns in a pan.

Once this is done, remove the pan from the heat, let it rest for 10 minutes, then filter the milk with a colander.

In a saucepan and immersed in boiling water, make the eggs firm by cooking for 10 minutes, at the end drain them and, after having cooled them with cold water, switch to shelling, set aside a hard yolk and cut the others into slices.

Now roll out the puff pastry and cut it into triangles, to lay on a baking tray brushed with water and cook them in the preheated oven at 190 ° C for 15 minutes.

In a small bowl, mix the cream with the lemon juice.

In a small pan, melt the butter now and add the flour, browning it slightly, then pour the flavored milk and sour cream, stirring constantly with the help of a wooden spoon.

Boil, flavoring with a pinch of salt and freshly ground pepper, cook for 10 minutes, making a rumata every now and then.

Pour the prepared sauce into a serving tray and arrange the slices of hard-boiled eggs on top, garnishing with the yolk set aside, cut into small pieces, and with the tarragon leaves.

Finish the perimeter of the tray with the triangles of puff pastry.
