Bottarga and cherry tomato sauce: how to make it, recipe

Recipe to prepare the bottarga sauce, to be prepared with fresh salad tomatoes, ideal to be combined with any type of pasta.


Ingredients for 4 portions

- 2 cherry tomatoes

- 8 tablespoons of oil


- 100 gr. of bottarga

- 1 garlic

How to prepare bottarga sauce and cherry tomatoes

Chop the bottarga, then cut the tomato into cubes of about half a centimeter in diameter, without removing the outer skin and the inner seeds.


Put all the ingredients in a bowl, where you can also add the pasta, once cooked and drained, mix well and serve on the table while still hot.

The fastest way to cut the diced tomato is to cut it first into slices, to overlap it to cut it into sticks which must then be further divided up to obtain the required cubes.

A little chopped parsley can also be added to this dressing, but only if fresh.
