How to make fried rags with brandy, a typical Tuscan recipe to be made using vanilla sugar, among the ingredients, orange or lemon zest, eggs.

- Butter gr 30
- Brandy
- Orange or lemon zest
- Flour 300 g
- Sugar gr 50
- 2 eggs
- Little salt
- Vanilla sugar
- Fry oil
Preparation of brandy fried rags
Mix the flour with the eggs, the sugar, the melted butter (there are those who use olive oil), a small glass of liqueur, a teaspoon of orange or lemon zest and a pinch of salt.

Work well in order to obtain a smooth sheet, make it into a ball and let it rest for about an hour, in the cool.
Roll the dough quite thin (with a rolling pin or with the machine) and cut it (you can also use the toothed wheel) into large strips and then into irregular pieces or lozenges, as you prefer.
Then fry them in abundant hot oil. As they are ready put the rags on a sheet of kitchen paper and sprinkle them with icing sugar or vanilla, as you prefer.
They can be enjoyed both hot and cold.
