How to make buckwheat noodles, pasta recipe with shrimp and zucchini as vegetables, obtained by mixing buckwheat flour with double zero white flour.
Ingredients for 4 people
For pasta
- 100 g of buckwheat flour
- 200 g of white flour "00"
- 1 egg
- 2 yolks
For the dressing
- 12 prawn tails
- 2 cloves of garlic
- 4 tablespoons of extra virgin olive oil
- 10 cherry tomatoes

How to prepare buckwheat noodles shrimp and vegetables
On a work surface put the two sieved flours in a fountain, put the pitted eggs in the center and a little salt.
Mix everything until a smooth and homogeneous paste is obtained, if necessary add a little water.
Make it into a ball and wrap it in plastic wrap, then transfer it to the refrigerator for about half an hour.
Wash the courgettes and tick them, then cut them into 4 parts lengthwise, remove the excess white and slice them into strips.
Shell the prawn tails and cut them into chunks.
Wash the cherry tomatoes, divide them into 4 wedges and remove the seeds.
Chop the parsley.
Pull the pasta with the machine and the sheet obtained divide it into noodles.
Spread the noodles over a tea towel.
Meanwhile, heat the oil with the crushed cloves of garlic in a pan, remove them, put the courgettes in them and sauté them.
Add the prawn pulp and immediately after the cherry tomatoes.
Cook for 2 minutes by wetting with a little hot water and add the parsley, salt and pepper.
Cook the tagliatelle in abundant salted water for about 1 minute, drain and sauté them in a pan with the sauce.
Serve them hot.
