How to make the cream of cannellini beans and shrimp, with shrimp and clams, flavoring the bean soup with chilli, parsley, garlic and oil, for a tasty soup.
Ingredients for 4 people
- 2 boxes of cannellini beans
- 250 g of shrimp
- 250 g of clams
- chili pepper
- parsley
- 1 clove of garlic
- 5 tablespoons of extra virgin olive oil
- salt and pepper
- toasted croutons
Preparation of cannellini bean and shrimp cream
Drain the beans from their storage liquid and rinse them under running water.

In a saucepan, season the extra virgin olive oil with the parsley, the chili pepper and the garlic, then add the drained beans and salt, mixing well.
Add about half a liter of water, depending on whether you want the cream more or less thick, and cook gently for 7-8 minutes.
Meanwhile, wash the clams and open them in a pan.
In another pan, cook the peeled prawns for a few minutes with a little oil, chopped parsley and salt, then keep them warm.
Switch the beans to the vegetable mill to obtain a cream.
Transfer the bean cream to the pan and simmer for 1 minute.
Put the hot bean cream on the plates, add the toasted croutons, arrange the clams and shrimps with their sauce on them, then season with a drizzle of extra virgin olive oil and a handful of freshly ground black pepper.
