How to prepare dried porcini mushroom roast beef

In a saucepan brown a spoonful of flour with a spoonful of pepper and a pinch of mustard.

Spread this mixture on the loin, grease it with a very light layer of softened butter, then tie it with a kitchen string.

Put the meat roll on the oven grill and cook it for 15 minutes in a hot oven, then sprinkle the wine on it and continue cooking over medium heat for another 15 minutes. When the meat is cooked put the salt and let it rest for approx. 10 minutes with the oven off.

Soften the dried mushrooms in warm water for approx. 20 minutes. After draining them, squeeze them and chop them.


Prepare the crushed garlic and chopped anchovies and put this mixture in a pan with a little oil, fry it, add the chopped mushrooms, then add the pine nuts, cover and slowly thicken the sauce.

In a pan put the sliced ​​onions with a few tablespoons of oil, a little water, salt and pepper. Cook for about half an hour.

Slice the meat and serve with the onions and mushroom sauce on top.
