- 1 tender duck

- 1 onion


- 1 carrot

- 2 celery sticks

- gr. 100 of diced bacon


- gr. 30 of dried porcini mushrooms

- 1 glass of white wine

- 1 romaiolo of broth


- 2/3 spoons of extra virgin olive oil

- salt and pepper

How to prepare duck with dried porcini mushrooms

Soak the mushrooms for an hour in a little warm water, then drain and squeeze them.

Clean and wash the duck well, then cut it into pieces and dry it with a cloth.

Meanwhile, slice the onion and fry it with oil and bacon in a large pan, then add the duck into pieces, continue browning and add the celery and carrot cut into rounds, and finally the mushrooms.

Mix and leave to flavor.

After pour the wine and let it evaporate, salt, pepper and add the broth romaiolo.

Put the lid on the pan and continue cooking over low heat for about an hour and a half.
