Fish soup: how to prepare it


How to cook fish soup, recipe with mixed fish to be cooked in a pan, necessary ingredients and description of all stages of preparation, to be served on slices of toasted bread.

Ingredients for 4 people

- 1 Kg. Of mixed fish (scorpion fish, san pietro, gurnard, tracina, priest fish, cuttlefish, squid, prawns,
500 g mussels, 500 gr. clams)

- 3 cloves of garlic

- 500 gr. of tomato pulp

- 1 sprig of parsley

- 1 hot pepper

- olive oil

- salt

How to make fish soup

Clean the fish by removing the entrails, scales, fins, head and fishbone.

Cook the heads and bones in a little water to obtain a broth to add to the rest of the soup.

Also clean the mussels and clams and cook them in a pan with a little oil and a clove of garlic until they are open, then remove the garlic (optional).

Wash the prawns, clean and cut the cuttlefish and squid on wheels. In a pan, brown 2 cloves of garlic in the oil, then add the crushed tomato pulp with the fork, the chopped parsley, salt and chili pepper.

Cook this sauce for 5 minutes, then add the cuttlefish and squid, continue cooking for a few more minutes and add the more tender fish.

Add the fish broth previously prepared and passed through a sieve.

Cook everything for 15 minutes while stirring gently.

Before finishing cooking, add a part of the mussels and clams in the sauce, the other part of the molluscs will be divided into the dishes when serving.

Meanwhile, toast slices of bread and if you like to rub garlic over them.

In each deep dish, put the slices of toasted bread with the fish, mussels and clams on top, and then pour over the hot cooking broth.
