Florentine eggs: recipe with spinach

How to make Florentine eggs, a simple recipe typical of Tuscany, what ingredients they serve and preparation guide.


Ingredients for 4 people

- 4 eggs

- 180 gr. spinach


- 20 gr. of butter

- 1 dl of milk

- 2 tablespoons of grated Parmesan cheese


- salt and pepper

Florentine egg preparation

Clean the spinach, wash it several times in plenty of cold water and drain it.

Put them in a pan with the butter, facendoli brown for about 3 minutes on low heat, stirring occasionally with a wooden spoon so as not to attack them and adding salt and pepper to give it flavor.


Add the milk, making it dry almost completely on high heat.

Arrange the spinach in 4 small baking dishes and press in the middle with the back of a spoon to create a hollow, then lay an egg in each, sprinkling it with the parmesan cheese.
