How to cook chicken breast in fricassee, a simple recipe with few necessary ingredients, quick process for preparation.
Ingredients for 4 people
- 4 chicken breasts divided in half, open and boneless
- 2 tablespoons of oil
- 4 yolks
- 1 lemon
- salt
Preparation of fricassee chicken breast
Cut the chicken breasts already divided into three parts lengthwise, then cut the strips of meat obtained into other pieces about one and a half centimeters wide.
Heat a little oil in a large enough pan, then pour the pieces of chicken and cook over high heat, stirring frequently, for a time of about 8 minutes.
Salt the surface of each piece of chicken evenly, but do not overdo it, and add a little water every now and then, just enough to prevent the meat from sticking.
In the meantime, combine the yolks, 4 tablespoons of water, a pinch of salt and lemon juice in a small bowl, beat with a fork to mix well.
When 8 minutes of cooking have elapsed, lower the gas and pour the egg yolk mixture into the pan, stirring constantly on a low flame while cooking for a further 2 minutes, until reaching the right density of the sauce obtained.
