Preparation of fried apple balls
To make the batter, beat the eggs, add the flour and knead to obtain a rather thick mixture.
Add the cold milk, sugar, a pinch of salt and mix.
Meanwhile, peel the apples and, with a small shot peener, make small balls.
Flour the apple balls and dip them in the prepared batter, then pass them in the breadcrumbs.
Fry them in hot oil, brown them and drain them on absorbent kitchen paper.
To make the eggnog, put the icing sugar, the egg and the Vin Santo in a bain-marie pan, then whip all together to obtain a sauce.
Pour the sauce into a tray and place the fried apple balls on top.
