Fried fish balls with sole and scampi

How fried fish balls are made, an easy recipe based on sole fillets and scampi, to be fried in a pan after passing the meatballs first in the beaten egg and then in the breadcrumbs.


Ingredients for 4 people

- 4 fillets of sole

- 200 g of shelled prawns


- 2 eggs

- 100 g of breadcrumbs

- 1 tablespoon of chopped parsley


- 1 pinch of powdered thyme

- 1 peeled onion

- half a liter of seed oil for frying


- salt and pepper

Preparation of fried fish balls

Start by boiling the fillets of sole together with the whole onion and a little parsley in a pan with a little salted water, for about 10 minutes, then drain them keeping the cooking liquid and let them cool.

In the cooking liquid put aside boil the prawns for 5 minutes, then drain and let them cool.

Pass the sole and scampi in the chopper and put the mixture in a pan, then add a slightly beaten egg, the remaining parsley, thyme, salt and pepper, as well as two little spoons of breadcrumbs.

Work well with a wooden spoon until a homogeneous mixture, after forming meatballs as big as a walnut.

Beat the remaining egg in a bowl and pass the meatballs first in the egg and then in the breadcrumbs.

Put the oil in a pan waiting for it to become boiling, then fry the meatballs until they are golden brown on each side.

Drain the meatballs from the oil and pass them in absorbent paper before serving them hot and sprinkled with a little fine salt.
