How to make fried prawns by passing them in batter made with 00 white flour and semolina flour with carbonated water, to serve them accompanied with a sauce obtained by mixing white Vermouth, sugar and vinegar.
Ingredients for 4 people
- 30 prawns already shelled and cleaned
- 1 tablespoon of semolina flour
- 150 g of white flour "00"
- 1 glass of carbonated water
- Seed oil for frying
- salt
For the sauce
- 1 glass of white Vermouth
- 1/2 glass of vinegar
- 2 spoons of sugar

Preparation of prawns fried in batter
For the sweet and sour sauce: mix the white vermouth well with 2 tablespoons of sugar and the vinegar.
For frying: prepare the batter by mixing the white flour with the semolina flour and pouring 1 glass of very cold carbonated water, in order to obtain a homogeneous cream.
Pass the already cleaned prawns in the batter and then fry them in a pan with the seed oil at 170 ° C for about 4 minutes.
Transfer the prawns to kitchen paper and salt them.
When serving, accompany the fried prawns with the prepared sweet and sour sauce.
