Green olives sauce with tomato for pasta dressing

How to prepare a good sauce with pitted green olives and tomato with extra virgin olive oil, ideal dressing for any type of pasta.


Ingredients for 4 portions

- 4 tablespoons of extra virgin olive oil

- 36 pitted green olives


- 450 gr. tomato pulp

- salt

How to make green olive sauce

Combine tomato pulp in a pan, 2 tablespoons of oil and a pinch of salt.


Put the pan on the stove with a high flame and, stirring frequently, boil for about 10 minutes.

In the meantime, prepare the olives to combine them whole, then without breaking them up, with the tomato during the last 3 minutes of cooking, in order to heat them.

Finally remove from the heat, add the remaining olive oil and season the favorite pasta, mixing well before serving on the table while still hot.
