Green pepper beans with bacon

How green beans are made with red chili peppers, a recipe that involves adding bacon with a dressing based on olive oil and grated Parmesan cheese.


Ingredients for 4 people

- 600 gr of green beans

- 3 tablespoons of extra virgin olive oil


- 1 red chilli pepper

- 2 tablespoons grated Parmesan cheese

- 1 onion


- 50 g bacon

- 1 bunch of parsley

- salt


- ground pepper

Preparation of green beans with chili peppers

Remove the tips from the green beans and, after cleaning them from any filaments, wash them well with care by passing them under tap water and place them in a pan with salted water already boiling, cooking for 8 minutes.

When cooked, drain, keeping 3 tablespoons of the boiling cooking water aside.

Take the bacon and cut it into cubes, then peel the onion and, after washing it, dry it well and mince it minutely.

Sauté the chopped onion in a non-stick pan with oil, preventing it from taking on color, then add the diced bacon, and the chilli pepper, browning for 1 minute, turning over with a wooden spoon.

At this point add the green beans and cook them, mixing them for a few minutes while continuing to cook over medium heat.

Add a pinch of salt and a pinch of ground pepper, wetting them with the cooking water set aside first, and continue cooking for a further 10 minutes on medium heat and with the pan covered, always stirring carefully at regular intervals to avoid make attack.

Chop the parsley after having washed and dried it well, then arrange the green beans in a serving tray, sprinkling them with chopped parsley and grated Parmesan, serving them while still hot.
