How to make delicious meringues at home, a recipe that allows, if desired, to use any discarded egg whites in other pastry or other recipes.
Ingredients for 10-12 small meringues
- 3 egg whites
- 200 g of icing sugar
- a pinch of salt
How to prepare meringues at home
With an electric whisk, beat the egg whites in a container, add a pinch of salt and when they start to whisk, add, gradually, fifty grams of sugar, mixing gently from top to bottom so as not to disassemble them.
When the egg whites are firm enough, add the remaining sugar with the same system, a little at a time, then continue to beat with a whisk until the mixture is whipped and detaches from the walls of the container.
Spread the baking paper on the oven plate, with a spoon distribute on top of small piles of compost, well spaced apart.
Turn on the oven at 120 ° C, when it has reached the temperature put the plate with the meringues, then cook them for about an hour, taking care not to color them.
Allow them to cool completely before removing them from the paper.
