How to prepare homemade pickled pickled vegetables

Wash and dry the vegetables well and cut them all into wedges or strips, excluding the onions which must remain whole.

Remove the celery threads, choosing only the innermost ribs.

Keep the vegetables separate, as they have different cooking times.

Boil in a steel pot as much vinegar as needed to dip the vegetables, with cloves, cinnamon, garlic, bay leaf and salt.

As soon as it boils, dip all the vegetables, making sure that each one remains al dente, to drain this in groups at a time with the skimmer.


Arrange the vegetables in the jars and completely cover them with excellent quality wine vinegar, then close the jar and place in a cool, dry place.
