Recipe that explains how to cook the bean sprouts, with the two cooking method, in the second is combined a special compound based on yolks, cream and nutmeg, suitable to form a pleasant dressing sauce, with a final sprinkling of Parmesan cheese.
Ingredients for 4 portions
- 6 spoons of milk or cream of your choice
- grated Parmesan cheese
- 400 gr of bean sprouts
- 4 egg yolks
How to cook bean sprouts
Put a pot on the fire containing a liter of water with a spoonful of coarse salt and, while waiting for it to boil, wash the bean sprouts by immersing in cold water, stirring them quickly and draining them using your hands.
As soon as the water boils, throw them in the pot and cook them for 2 minutes. In the meantime, beat the egg yolks in a cup together with the milk or cream according to preference, nutmeg and a pinch of salt.
Drain the sprouts and put them back in the cooking pot, adding the yolk-based mixture, cooking them for about 2 minutes on a low flame and stirring often, until the mixture thickens, so that it becomes a smooth sauce.
Finally transfer everything to a plate and serve hot, sprinkling over a quantity equal to 4 tablespoons of grated Parmesan cheese.
