- 1 Kg. Of onions
- 6 fresh eggs
- olive oil
- salt
Preparation of the onion omelette
In a pan with the bottom covered in oil, sauté the fresh onions over a moderate heat, sliced with their green part until the beginning of the leaves.
Cook the first 15 minutes with the pan covered, then without the lid, stirring frequently until the onion liquid has completely withdrawn.
Add the salted beaten eggs and mix well with the onions, stirring quickly with a wooden spoon.
Shake the pan to prevent the omelette from sticking and continue cooking over moderate heat on both sides.
