How to make custard: grandma's recipe

Grandmother's recipe that explains how to make the custard, a fundamental component for the preparation of many desserts, with a description of the main variants, chantilly cream and burnt cream.


Ingredients for 4 people

- 4 dl of milk

- 2 spoons of sugar


- 2 tablespoons of flour

- 3 egg yolks

- 1 piece of lemon peel


Preparation of the custard recipe of the grandmother

Work the yolks with the sugar, add the sifted flour and mix.

After boiling the milk with the lemon peel, remove the peel and pour the milk on the prepared mixture, then put it on the fire.

Stir continuously with a wooden spoon and as soon as the cream starts to boil, remove it from the heat, mix it and put it back on the heat.


This operation must be repeated three times. When it is cold, the custard can be combined with slightly sweetened whipped cream, in equal proportions, mixing from the bottom up, in order to obtain the diplomatic cream.

Traditional custard

It is served in spoon desserts or also used to garnish various types of cakes, sponge cake, cream or ricotta cannoli, baby cream and many other pastry specialties.

Chantilly cream, used especially in pastry shops as a filling or decoration for various types of desserts, is a particular cream that is obtained by working whipped cream with the union of vanilla essences.

The recipe originates from the one first experimented by the Frenchman François Vatel at the end of the seventeenth century, which involved the combined use of whipped cream and icing sugar with vanilla flavors.

The burnt cream, from the French creme brule ', is one of the typical dessert products and is based on custard lined with a crunchy sheet of caramelized sugar.
