Ingredients for 4 portions
- fresh mint leaves
- fry oil
- vinegar
- salt
- 1 Kg. Of fresh zucchini
- 2 cloves of garlic
Preparation of fried courgettes with mint
After washing the courgettes, cut them into rounds and leave them to dry in the sun for a few hours by placing them on a wooden board, covering them with a light cloth, and turning them 2-3 times.
After frying the courgettes in a pan with hot oil and drain them well on absorbent paper.
When they are cold, arrange the courgettes in layers in a bowl or glass dish. Season each layer with salt, a little chopped garlic, mint leaves and, above all, vinegar.
Cover the bowl and leave the courgettes to rest overnight in the refrigerator.
