Procedure for cooking at home the recipe for potato gnocchi, description of the processing required to obtain a homogeneous dough, how they are cooked and seasoned.
Ingredients for 4 people
- 1 Kg. Of potatoes
- 250 gr. made with flour
- 2 egg yolks
Preparation of potato dumplings
Boil the potatoes without peeling them.
As soon as they are cooked, peel them, pass them to the passatutto and mix them together with the flour, the egg yolks and a pinch of salt.
Knead the dough well and make small loaves a finger and cut them into 2 or 3 cm long dumplings.
Cook them in abundant salted water for about two minutes (they are cooked when they rise to the surface).
Remove them a few at a time with a slotted spoon, drain, arrange in a bowl and season in layers with cheese and tomato sauce.
