How to cook a pumpkin pie, a recipe that includes, among the ingredients, fresh mushrooms and dried porcini mushrooms, enriched with nutmeg and grated Parmesan flavor.
Ingredients for 6 portions
- gr. 200 of fresh mushrooms
- 2 cloves of garlic
- parsley, thyme and salt
- vegetable broth
- gr. 30 of flour
- gr. 800 of pumpkin pulp
- 1 leek
- gr. 50 of butter
- gr. 20 of dried porcini mushrooms soaked and squeezed
- half liter of milk

- 10 g of grated Parmesan cheese
- 2 egg whites beaten until stiff
Preparation of the pumpkin pie
Cut the pumpkin into small cubes and cook it in the oven for 20 minutes at 180 °.
Cut the leek into slices and let it dry with 20 gr. of butter, then add the soaked and squeezed mushrooms, salt, thyme, garlic and parsley.
Make the sliced fresh mushrooms flavor and add them, continue cooking with a little vegetable broth.
Meanwhile, prepare the béchamel with 30 gr. flour, 30 gr. of butter, about half a liter of milk, salt and nutmeg.
Pass the pumpkin and add the béchamel, the mushrooms, the 2 egg yolks, the grated parmesan and the egg whites until stiff, mixing from the bottom upwards.
Pour everything into a buttered baking dish and bake at 180 degrees for 40 minutes.
