How to make the Garmugia from Lucca with croutons

How to make Lucca's garmugia, a typical recipe from Lucca, based on fresh onions and bacon, with beef pulp and mixed vegetables, preparation and cooking, to be served hot.


Ingredients for 4 people

- a bunch of fresh spring onions

- 50 gr. of bacon


- 15O gr. of ground beef pulp

- 400 gr. overall of various vegetables (peas, asparagus tips, sliced ​​artichokes, broad beans)

- 1 liter of broth


How the Lucchese garmugia is prepared

Fry the onions in the bacon cut into strips, add the ground beef pulp and mix.

After a few minutes add the vegetables making them flavor and, continuing to mix, cook for another 15 minutes.

Add the liter of broth and bring to a boil.

It is served hot on toasted bread croutons.
