- 10 juniper berries

How to prepare juniper venison fillet with plum sauce

Cook the prunes in red wine and in the port, then pass them through a sieve.

Add the broth and reduce the sauce over the heat.

Add the coffee beans, boil for a few more minutes and leave to infuse for about half an hour before removing the coffee beans.

Meanwhile, cut the venison fillets into 8 pieces and cook them in a pan with the extra virgin olive oil and chopped juniper berries, then add the salt.

Bake them at 180 ° C for about a quarter of an hour.

Heat the plum sauce, salt and, when it is still hot but off the heat, add the chocolate.

Stir the sauce until the chocolate has melted.


Add the pepper to the venison fillets and serve them with the plum sauce.
