Ingredients for 4 people
- 700 gr. of lamb stew
- 1 onion
- 1 celery rib
- 1 carrot
- 6 egg yolks
- broth
- a knob of butter
- juice of 1 lemon
- salt and pepper
How to prepare the lamb fricassee
Finely chop the onion, celery, carrot and fry them in a knob of butter.

When the butter has melted add a little broth and continue cooking the smells for about 10 minutes.
Add the lamb stew, salt, pepper and cook over high heat.
When cooked, remove the meat from the pan and in the remaining hot sauce, pour the beaten egg yolks with the lemon juice and salt.
Stir immediately and quickly to obtain a homogeneous sauce to be poured on the stew before being served on the table.
