How to make mimosa cake with fresh fruit by wetting the sponge cake with pineapple juice in syrup and Strega-like liqueur, and spreading a delicious chantilly cream on it.


Ingredients for 8 people

- 1 sponge cake

- 2 kiwis


- 2 bananas

- 1 basket of strawberries

- 1 glass of Strega type liqueur


- 250 g of pineapple in syrup

- 200 g of toasted flaked almonds

- 1/2 liter of milk


- 3 yolks

- 4 spoons of sugar

- 3 tablespoons of flour

- 1 vanilla stick

- 1 lemon zest

- 300 ml of fresh cream

- 10 g of icing sugar

How to prepare mimosa cake with fresh fruit

Boil the milk with the lemon zest and the seeds of the vanilla bean.

In a bowl beat the yolks with the sugar and add the sifted flour, then pour the milk into it after removing the lemon zest.


Put the mixture in a pan on low heat and as soon as the cream thickens, remove it from the heat and let it cool.

Whip the cream until stiff, add the icing sugar and incorporate it into the cold custard, mixing gently from the bottom up.

Blend the pineapple and mix it together with its liquid and liqueur.

Cut the sponge cake into 2 disks and blend the top.

Place the bottom of the sponge cake in a tray and sprinkle it with the pineapple juice and liqueur.

Arrange the fruit cut into small pieces on the sponge cake.


Spread the chantilly cream on the fruit and sprinkle with the smoothie sponge cake and the toasted almond flakes.

Garnish with fresh whole fruit to taste.
