How to make mixed vegetables in a pan, recipe for a vegetarian side dish including onions, tomatoes, peppers, courgettes and celery, to be cooked in a pan and served as an accompaniment to boiled meat or hot polenta.
Ingredients for 4 people
- 300 g of white onions
- 250 g of tomatoes, peeled and seeded
- 2 courgettes
- 2 large sweet peppers
- 1 celery rib
- 1 tablespoon of vinegar
- 1 tablespoon of extra virgin olive oil
- 50 g of butter
- salt and pepper
How to prepare mixed vegetables in a pan
Wash all the vegetables.

Remove the stem, the filaments and the seeds inside the peppers, then cut them into strips.
Chop the tomatoes, slice the courgettes and chop the celery.
Peel the onions, wash them, slice them finely and put them in a pan with oil and butter.
Fry them gently until they are wilted but not colored, then add the other vegetables, vinegar, salt and freshly ground pepper.
Place the lid on the pan, lower the heat to low and cook for about 45 minutes, stirring occasionally.
Serve hot.
