Mushrooms and gorgonzola with egg and lemon mustard

How to prepare gorgonzola mushrooms with mustard and chives egg sauce, lemon juice and olive oil.


Ingredients for 4 portions

- 1 egg yolk

- 1/2 tablespoon of white wine vinegar


- 6 tablespoons of extra virgin olive oil

- 300 gr. of champignon mushrooms

- juice of half a lemon


- 1 tablespoon of mustard

- 50 gr. of gorgonzola

- 1 bunch of chives


- salt and pepper

Preparation of mushrooms and gorgonzola

Cut the cheese into small pieces and wash the mushrooms after cleaning them from the earth that may be present on them.

After drying them, cut them into thin slices, put them in a bowl and sprinkle them with lemon juice so as not to blacken them.

Wash the chives and cut them. Drain the mushrooms and dry them gently with a towel.

Put mustard, egg yolk, salt, pepper, a spoonful of water and vinegar in a bowl, beat everything with a fork and while doing this add the oil by dripping it in a drizzle.

Combine the chives and gorgonzola, mixing all the ingredients well until obtaining a homogeneous mixture.

Finally, arrange the mushrooms on the plate to serve, sprinkling them with the cheese sauce over their entire surface.
