- 2 eggs
- 1 heaped teaspoon of mustard
- 2 spoons of milk
- 2 spoons of parmesan
- 2 tablespoons of oil

Preparation of mustard eggs
Take a cup and mix, with the help of a fork, the mustard with the milk and the Parmesan, together with a pinch of salt.
After add the eggs and beat enough to obtain a homogeneous mixture.
At this point, heat just a little oil in a small pan with a non-stick bottom and pour the prepared mixture into it, cook for 8 minutes with a lid on it, until it is curdled.
