Pain d’épices, original recipe with rum honey

How to make pain d'épices, in Italy also known as spice pan, a traditional French dessert, flavored with cinnamon and anise, without eggs, with flour, milk and honey.


Ingredients for 6 people

- 500 g of flour

- 250 g of honey


- 1/4 liter of water

- 10 g of baking powder

- 1/2 liter of warm milk


- 1 glass of rum

- a pinch of ground cinnamon

- a pinch of ground anise


- a pinch of salt

- baking paper

How to prepare pain d’épices or spice bread

Put the honey in a pan, over low heat, with the water, rum, a pinch of salt, anise and cinnamon and let the mixture cool.

Sift the flour together with the yeast and add them to the honey by letting them drop in rain, always turn with a wooden spoon, add the warm milk and mix well.

Line a rectangular plum cake type with the baking paper and pour the mixture into it, then put it in the preheated oven for an hour.

After removing the cake from the oven, let it cool and serve it on the table cut into slices.
